How hot is "hottest" really?

Heat is measured in Scoville Heat Units (SHU) — the Carolina Reaper sits at around 1.6 to 2.2 million SHU, Pepper X at around 2.69 million. We explain exactly what these numbers mean and how the measurement works in detail in our guide to the Scoville scale.

Why we don't use capsaicin extract

Some products on the market advertise especially spectacular Scoville numbers without actually reaching those values through the chilli itself — instead relying on added capsaicin extract, a highly concentrated, isolated irritant that has little to do with the actual flavour of chilli. Such sauces often deliver only pure, one-dimensional heat with no recognisable chilli aroma behind it, almost like a pure irritant rather than a culinary product.

That's exactly what we deliberately set ourselves apart from: with us, it's only natural and fresh. Our heat comes exclusively from the chillies themselves, which we grow in Illmitz and process fresh — not from an added extract. That means with ReapRacha and our Bhut Jolokia powder, you actually taste the chilli behind the heat, with its own character and aroma, not just an interchangeable wall of heat.

How to use extremely hot products correctly

A single drop of ReapRacha or a knife-tip of Bhut Jolokia powder can set an entire dish on fire. Work your way in slowly, especially if you have little experience with extreme heat — our milder varieties are a better starting point if this turns out to be too much of a good thing.
