Costoluto Genovese – character and use
Costoluto Genovese is an open-pollinated Italian beefsteak tomato whose deeply furrowed shape stands out immediately. The variety has long been prized in Italian cooking. Its fruit is juicy and aromatic, which is why it convinces both fresh and processed. The irregular ribbed shape is typical of the variety, not a quality flaw.
Fruit, flavour and harvest
The red, flat-round fruit usually weighs around 150 to 250 grams. Flavour-wise, Costoluto Genovese combines fruitiness with a light acidity and mild sweetness. Sliced fresh, it suits salad and bread; cooked, its aromatic flesh brings depth to sugo, tomato soup and sauce.
Position and care
The indeterminate plant reaches around 180 to 220 centimetres under good conditions. It needs a sturdy support and is trained to one or two shoots for manageable growing. Plenty of sun, warmth and rain protection favour its medium-late ripening. In a pot, use at least 25 litres of soil, water regularly, and feed with tomato fertiliser as needed during the main growth period.
A tomato young plant, raised by us
We raise the Costoluto Genovese tomato plant ourselves at our family business in Illmitz. You'll get a vigorous young plant to start your tomato season. After shipping, it should first stand in a bright, sheltered spot and be gradually acclimatised to direct sun and outdoor conditions. It's only planted out permanently once no more late frosts are expected.
