Sriracha mayo is one of the simplest ways to give a dish more depth instantly – and yet it's usually bought ready-made rather than made at home, even though the mixing ratio is exactly what makes the crucial difference.
Why the Mixing Ratio Matters More Than the Recipe Itself
Ready-made sriracha mayo from a jar always has the same heat level – when you make it yourself, you decide how much sauce goes into the mayonnaise. That's exactly what makes the difference between a mayo that suits the dish and one that either overpowers it or leaves it too mild.
SerRacha or ReapRacha: Two Completely Different Starting Points
Our SerRacha gives a balanced sriracha mayo with a clear chilli and garlic note and can be dosed well using the classic mixing ratio. Our ReapRacha, on the other hand, is our hottest sauce and calls for a completely different approach: here, a few drops are enough to start with, and the usual quantity simply can't be carried over.
More Than Just a Burger Dip
Sriracha mayo works far beyond the classic burger: with chips and baked potatoes, in sushi bowls and rice dishes, with grilled fish and prawns, or as the base for a spicier coleslaw. Its creamy consistency makes it interesting anywhere plain sauce would otherwise be used.
Vegan or With Yoghurt
If you'd rather skip animal-based mayonnaise, simply swap it for a vegan alternative – the basic principle stays the same. Yoghurt instead of mayonnaise also works, but gives a lighter dip with a different consistency and shelf life than the basic recipe.
