  • 1,000 g minced meat
  • 4 Carolina Reaper chillies
  • 25 g curing salt
  • 6 g cutter aid (KHM) with colour-fixing agent
  • 30 g cornflour
  • 4 g ground pepper
  • 1 g ground ginger
  • 1 g ground thyme
  • 1 g ground marjoram
  • 1 g ground mace

Zubereitung

Method

  1. Start by putting the minced meat into the stand mixer with the dough hook straight away.
  2. Meanwhile, weigh out the spices and grind them finely in a mortar.
  3. Finely chop the chillies.
  4. Dissolve the cornflour in ice water and stir well.
  5. Preheat the oven to 170°C.
  6. While mixing, add the cornflour ice water, the spices and the chilli to the mince.
  7. After about 30 minutes, a fine, creamy and very sticky mixture forms. The meat mixture is then ready for the next step.
  8. Fill the cake pop mould with the mixture, then join the two halves together.
  9. Bake for 25 minutes at 170°C (conventional top/bottom heat).
  10. Then remove the balls from the mould, tidying up the seam with a knife if needed.
  11. Return to the oven at 220°C fan for a further 5-7 minutes to brown.
  12. Skewer onto wooden sticks and push into a loaf of bread for presentation.
  13. Brush the tops lightly with BBQ sauce and top with a milder chilli.

  15. This is the ideal party snack for when things can be a little more unusual.
  16. Ready-made Leberkäse mixture is available from butchers and specialist shops. That saves you the step of making the mixture yourself. You can jazz up the mixture however you like.
  17. The mince should be ground as finely as possible. Ideally even bowl-chopped, though few of you will have a bowl chopper at home.
  18. The toppings (purely decorative) are entirely up to you.

The combination of slow cooking at 170°C and a brief browning at 220°C gives you an evenly cooked ball with a crisp surface – a principle that also works with other shaped meat mixtures.

Carolina Reaper: Heat for the Experienced

Four Carolina Reaper chillies per kilo of mixture give a distinct, long-lasting heat that doesn't mask the Leberkäse flavour, but complements it deliberately. For a milder version, you can reduce the amount of chilli or swap in a variety from the Heat Level 8-10 category.

Presentation as the Highlight of the Party

Skewered on wooden sticks and arranged in a loaf of bread, the cake pops become the visual centrepiece of the buffet. BBQ sauce and milder chilli toppings round off the overall look and flavour.
