Zutaten

  • 8 hard-boiled eggs
  • 4 boneless chicken thighs
  • 2 Devil's Tongue chillies
  • 2 tbsp mayonnaise
  • 1 tsp mustard
  • 1 large pickled gherkin
  • 200 ml buttermilk
  • 350 g flour for coating
  • Salt and pepper
  • Hot Legs Rub
  • 20 g gochujang
  • 50 g honey
  • A splash of apple cider vinegar

Zubereitung

Method

  1. Halve the chicken thighs and marinate with Hot Legs Rub and the buttermilk for about 10 hours.
  2. Halve the eggs and remove the yolks.
  3. Mix the yolks well with the chilli, mayonnaise, mustard, gherkin, and salt and pepper.
  4. Transfer the mixture into a piping bag and fill the egg halves with it.
  5. Mix the flour with Hot Legs Rub and coat the chicken thighs in it. The buttermilk gives a crispy coating.
  6. Deep-fry the chicken and, once drained, place it on the prepared egg halves.
  7. Mix the gochujang with the vinegar honey and drizzle over.
  8. Garnished with chives, it's a real eye-catcher!

  11. You can use any hot sauce instead of the gochujang honey. That said, the sweetness of honey with gochujang is perfect for the final kick.

A Sweet-and-Hot Finish With Gochujang

Gochujang with honey and a splash of vinegar makes a glaze that combines sweetness, heat and acidity in one element – and can be swapped for any other hot sauce if you want a different flavour direction. Fresh chives provide the final colour and flavour counterpoint.

Also Works With Schnitzel

If you don't have chicken thighs on hand, you can just as easily apply the coating technique to schnitzel, cut into strips and set on top of the eggs – the basic principle of a spiced coating and sweet-hot glaze stays the same.
